Putting the phone into airplane mode before launching the app is too risky since it still might run in the background when the airplane mode is switched off again. For Android there are apps (like NetGuard) which allow to disable wifi and mobile data permanently.

I use an old phone. I leave it in airplane mode(wifi off). This way I can run the Traxxas Link app without it knowing it needs an update. I've also avoided an update by turning my current phone to airplane mode before opening app, then once the app is on and is not able to check for updates. Turn the truck on as normal and I was able to use them without waiting for a possible update to start/finish.

This is a very clever option.
